Brunching with Bruce

More accurately dinner, but it's more a brunch dish. My take on mushrooms on toast.

This is the meat version cos I'm equal opportunist... (I used spicy tofu).

Fry good quality bacon, remove from frypan. Fry mushrooms and a couple of small fennel bulbs (chopped small), with some chilli, fresh ground pepper and a bit of lemon juice. Add chopped bacon at the last minute.
On the toast, place sliced buffalo mozzarella and dump mushroom mixture on top.

Simple. But damn it was good.

Yum - like the sound of the fennel bulb. Would add an interesting twist. We'll have to try this one.

Bit of friend cumin seed, goats feta and chilli as the start of scrambled eggs is great hangover food. Just btw.

Also, have you had that tofu scramble thing at Maranui Boat Club? That's the best brunchiness available in Welli, I reckon, and is easy to riff on / fun to attempt and have tasty accidents with.

Friend cumin seed!? :D Best typo ever. Cumin most certainly is my friend, but should probably leave out the "n".
